Enjoy this delicious and powerful soup!
You will need:
• 1 tablespoon of olive oil• 2 medium onions chopped• 8 medium carrots chopped• 1 teaspoon of sea salt• 1 liter and a half of vegetable broth• 1 liter of skimmed milk • 2 tablespoons of ginger peeled and chopped• 2 tablespoons chopped green onionsPreparation:
Cook the olive oil with the onion for 3 minutes. Add the carrots and stir continuously. Then add the vegetable broth , lower the fire and cook for another 20 minutes with the pan covered. When the carrot is fully cooked , turn off the fire and blend it with the milk slowly slowly. Remove, put in a pan, add the ginger and cook the soup for 5 more minutes . Serve with chopped chives and add salt to taste! Enjoy!
